Oven Roasted Oysters with Spicy Chili Butter


This one is inspired by one of our trips to Baja. If you have access to fresh oysters on your travels, step into the world of culinary sophistication with the art of cooking oysters outright on the beach. This delicate dish combines the briny essence of fresh oysters with the fiery kick of spicy chili butter, creating a symphony of flavors that will have you longing for more.

What makes Oven Roasted Oysters special?

Unlike traditional raw oysters, oven roasting brings out a unique depth of flavor and texture in the oysters. The heat from the oven enhances the natural sweetness of the oysters while maintaining their tender juiciness. The addition of spicy chili butter adds a fiery umami that you'll find simply addictive.

Ingredients:

2 Dozen Oysters
Ice Cream Salt or Rock Salt
 
15g Canola Oil
15g Garlic. Minced
40g Shallots, Minced
5g Kosher Salt
10g Cayenne
50g Chile Crisp
1/2 # Butter, Softened

Grated Parmesan Cheese 

Instructions:

Begin by adding canola oil to a small sauté pan set over medium heat.  Add in the garlic, shallots and salt and cook until the vegetables are soft and translucent, being careful not to brown them.  Remove the pan from the heat and allow to cool to room temperature. 

In a small mixing bowl, add in the cooked vegetables and all of the remaining ingredients.  Use a spoon to mix everything into the soft butter until everything is evenly incorporated.  

Pour rock salt into a 10” cast iron pan. Shuck your oysters and place them on top of the salt.  Nestle them in so that the oyster liquor doesn’t spill.  Place a heaping teaspoon of butter on top of each oyster and top with a heavy sprinkle of parmesan cheese. Place the cast iron into the oven to cook, rotating the pan as necessary.  The oysters should only need about a minute to a minute and a half to cook and caramelize the butter on top.  Remove the oysters from the oven and allow to rest for a minute or two before slurping down!
